There are ways around the typical EFI feel if the ECU/firmware were to allow the user to program the relative parameters. I had an '02 Cannondale. Not a success story by any means but the EFI system back then was totally flexible with the right software package, or hacking the file.
Much more could be tailored than just the fuel and ignition matrix. There were parameters that allowed changing the systems response time to + and - relative TPS changes. This had a big effect on the overall feel of the system. Stock the bike was like diesel truck, after some (well, a lot) work it had better manners than some of the systems today. I suspect the reason behind all this is that the older ECU was an off the shelf unit used in some street bikes as well, larger in size and power consumption. The newer systems designed for MX bikes that run on lower power from the stator and a capacitor are likely more simple and specialized.
